Lunch is probably my favorite meal to throw together, because it is so versatile and easy. I can use leftovers from the previous nights' dinner, or I can put together a little of this and a little of that. This lunch plate could be titled, "The Picky Lunch" because that's what we called it when I was growing up...put a little of just about everything on a plate and even the pickiest of eaters will be happy. (I wouldn't know anything about being picky as a kid. Uc-hum.)
This is a better than average lunch for me, honestly... but it gives you an idea of the variety of things you can easily put together for lunch. Legal applesauce with cinnamon is a good filler. Avocado with salt and pepper is always a favorite - so filling and nutritious. Sunflower seeds are packed with flavor and nutrients (did you know they're a great source of calcium, iron, vitamin B-6, and magnesium?). Carrots with peanut butter add a nice crunchy, salty flavor to the meal, and fruit is so yummy and sweet! But my favorite thing on this plate? The dates stuffed with cheese. This is kind of addictive and I had to pick up another box of dates at Costco last week to keep up my stash. ;-) Top it off with orange juice and you have a meal that would fill you up on even your hungriest of days.
