Warm days call for smoothies! I love a good breakfast smoothie. I make them a lot for my boys and myself, and this is one of the winners that we all like! I like that it is sweet, but also contains a handful of spinach for good nutrition (as if the frozen fruit and yogurt weren't enough. . . )
Tropical Spinach Smoothie
- Frozen mango
- Frozen pineapple
- 2 speckled bananas
- 2 cups of SCD yogurt
- A handful of spinach
- Honey to taste
Warm up the frozen mango and pineapple for a couple of minutes in the microwave in a large microwave-safe bowl.
In a blender, layer the SCD yogurt with bananas and honey. Add the warmed frozen fruit and a handful of spinach. Blend for a couple of minutes, until smooth. Taste test, and add more honey if needed.
Serve and enjoy!
I love to buy my spinach at Costco and freeze handfuls in sandwich-sized zip top bags. This makes it really easy to add to smoothies!
Also, a great way to increase your consumption of coconut oil is to warm a tablespoon or two up, and drizzle it slowly into the smoothie as it is blending. Adding the oil while the blender is on prevents it from solidifying and creating lumps in your smoothie.
