The Glorious Cheese Taco Shell

This is a guest post by my sister, Gretchen Jensen. She is following the Keto diet and does such a great job coming up with creative ideas and delicious recipes that frequently cross over with the SCD. I can't wait to try this yummy taco shell myself!

Have you ever missed the crunch of a taco shell? Tired of lettuce wraps or taco salads? Here is the perfect solution! Not only is this amazing cheese taco shell great for tacos but it makes an amazing breakfast or lunch "sandwich" as well!  

The way you make the shell is very similar to "cheese lace" although you will need to cover the plate so that there are not very many holes in the finished product. I recommend 3 minutes of cook time in the microwave but you will want to watch to make sure there is an even cook and that the cheese doesn't burn. 

Cheese Taco Shells

You will need:
 - One cup of grated cheese (any hard cheese like cheddar will do)
 - A round  microwave-safe plate
 - Coconut or olive oil
 - Two cups
 - Wooden spoon
 - Paper towels

Place cheese on oiled plate in a circle shape and microwave for approximately 3 minutes. When the cheese is bubbly and beginning to brown, remove and soak up some of the oil with the paper towels. 
Carefully remove the cheese with a knife or fork and drape the cheese over the wooden spoon suspended between two cups. Allow to cool in this position. 

Fill the taco shell with whatever your heart desires! Some examples are taco meat, lettuce, avocado, tomato and salsa. For breakfast "tacos" fill with eggs, bacon, spinach, tomatoes, onions. For lunch "sandwich taco" fill with lettuce/spinach, chicken, tomato, more cheese, and SCD mayonnaise.
