SCD English Muffin

I'm pretty sure I know what you're thinking - that looks too much like bread to be SCD-legal! I agree. And I am also happy to tell you that it feels like bread, is super fast and easy to make, and brought back vivid memories of English muffins pre-SCD. What more could you want?

On our trip to visit my family for Christmas, my Mom whipped out the ingredients for these and made one for me. Within five minutes, I was happily tasting it, and in awe of the ease involved and texture produced.

The original recipe was made for the Paleo diet, and we found it on RunningToTheKitchen.com. We changed a few things to make it SCD-legal and a little lighter.

The result is quite revolutionary for the SCD.

This bread is so quick and easy to make, meaning less time needed in the kitchen . . . which can be particularly helpful on busy mornings! It's a perfect base for a breakfast sandwich, BLT, or simply to enjoy alongside any meal. Just toasted and buttered alone, it is great!

The Cinnamon-Raisin version is my favorite, although the plain version is really good, especially if you have other flavors alongside or a yummy spread.

I have to add that when we traveled, I brought along all of the ingredients in a small baggie except the egg white and hot water, which I added at the hotel (we carried eggs in our cooler). We also took along a bowl to cook it in, and since we had a microwave in the room, I enjoyed it for breakfast at the hotel. Very easy travel food if you have a microwave!

Makes:
Two halves

Ingredients:


  • ¼ cup almond flour
  • 1 Tablespoon coconut flour
  • ¼ teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 egg white
  • ½ teaspoon coconut oil
  • 2 Tablespoons hot water
For a Cinnamon-Raisin version, add these ingredients:
  • ¼ teaspoon cinnamon
  • ½ Tablespoon honey
  • 1 ½ Tablespoons raisins


Instructions:
  1. Mix dry ingredients together in a small ramekin or other microwave-safe bowl.

  2. Add wet ingredients and mix well.
  3. Microwave for two minutes.
  4. Slice in half and toast until golden brown.
  5. Serve with butter or homemade jam, peanut butter – or any other SCD-legal spread! This would work great for an egg, bacon & cheese breakfast sandwich or BLT.

Mix the ingredients together in a microwave-safe dish.

When all ingredients are mixed together, press down lightly and then microwave for 2 minutes.

This is how it looks after it is cooked. Allow to cool slightly, then remove and cut in half. Toast until golden brown.

Hi Casey, I've heard that there may be some almond flour versions out there. Unfortunately, I haven't tried it yet. You might Google microwave "Paleo English muffin with almond flour". Let me know how it turns out with almond flour!

Hi Jennifer, Yes, when I posted this on facebook someone mentioned they had found another recipe that was for the oven. 400 degrees F for 15 to 20 minutes is what they said... let me know how it turns out! :)

This muffin is AWESOME!!! I just made it for my teenage daughter who has UC. She;s sick of eating things made with almond flour and told me not to make her anything with almond flour ever again:)lol!! But when I saw this recipe, I just had to try it. So I surprised her and made it. She LOVED IT!!! You can't taste the almond flour and it has the exact consistency of an english muffin!! Thank you so much for sharing this recipe!

Any sea of how to make these without usingba microwave? They look fabulous, but we don't use a microwave.
