Our Favorite Taco Pork

Taco night is becoming a weekly tradition at our house. Everyone loves San Antonio Tacos! A favorite from back before SCD, when my Mom and I enjoyed them on the Riverwalk in San Antonio, they are now one of our favorite SCD meals! But since my husband Jim came up with this delicious recipe for easy crock pot pork that we freeze in large amounts, this pork has become a must-have ingredient in our tacos.

First, we buy around 16 pounds of pork at Costco and get out our two crock pots late in the day so we can slow cook the pork all night.

The pork comes already chopped in two, which makes it very easy to just separate and put into two large crock pots.

Turn the crock pots on low and add the spices. Into EACH crock pot, sprinkle these spices over the meat:
1 Tablespoon pepper
1 Tablespoon salt
1/4 cup thyme
3 Tablespoons smoked paprika

Cook on low overnight. You can't overcook this! Just check in the morning, and if it doesn't pull apart easily with two forks, turn it up to high and cook for a few more hours. When the pork pulls apart easily it is done!

Mix together a bit, remove fatty bits, and transfer to a few large bowls to cool.

Bag enough for your family's needs for one meal, in freezer quart-sized Ziploc bags. My batch yielded 14 meals' worth! That should do for 3 - 4 months. One night a week, an easy meal is made ahead!

On the night of your taco dinner, pull a bag of frozen pork out to thaw and heat up a tablespoon or two of oil in a pan. Meat can be put into the pan partially frozen. Heat on medium-high heat and brown the meat, stirring occasionally. Meanwhile, chop up the other ingredients. We like to have our tacos with avocado, tomatoes, cheddar cheese, and a chopped cabbage/cilantro/lime juice/salt & pepper combination. I love SCD mayonnaise with this, too, and eat mine from my plate . . .  but you could also make a lettuce wrap "tortilla." (I fry corn tortillas for the non-SCDers in the family.)
