It's really helpful to have a nutritious, filling smoothie to fall back on when I need a quick meal! I make this Peanut Butter Spinach Smoothie whenever I am too busy to make a more complex meal, like when I'm running out the door in the morning. . . or when I need to go shopping and stock up again, I usually have these staple ingredients on hand. I buy a big tub of organic baby spinach at Costco and bag it up in sandwich sized zip top bags and then freeze them. If I'm running low, I put it on the list! I'm not a big salad eater (too much tasteless chewing!), so I like how easy and painless it is to get spinach into my diet by adding a handful to a smoothie. Peanut butter is always in the fridge. And let's hope that there are almost always speckled bananas in the fruit basket on the counter. (We buy a clump of greenish yellow bananas and a clump of yellow bananas each week to ensure that this is possible.) SCD yogurt is a must for me - I eat some just about every day, and if I don't make it before the current batch is gone, I really miss it in the day or two it takes for the next batch to be ready! It's almost always on hand. Honey is always on my counter. And vanilla is a staple in my cupboard. So here's what I put together if I'm feeding myself and my kids this smoothie. Peanut Butter Spinach Smoothie Serves 4 Ingredients: 2 cups of SCD yogurt 1 or 2 speckled bananas A large handful of spinach A heaping spoonful of peanut butter (peanuts & salt only) Honey to taste (about 2-3 Tablespoons?) Vanilla (sugar-free) to taste (about 2 teaspoons?) Directions: Blend all ingredients in a blender and enjoy! Makes a quick snack or meal on the go! I think that often the true test of a recipe is whether my kids like it. They really enjoy this one. . .and I love it because it's quick, delicious, filling, and full of nutritious ingredients!

Kim, I'm glad that was a helpful hint for you. :) I also got another idea on Facebook from a reader - freeze bananas when speckled and use them when I don't have fresh speckled bananas on hand!
