I am so looking forward to our new cookbook! My Mom has been working hard on it for a long time! We don't live close to each other, but when we do get together I've had the joy of tasting some of the recipes . . . and have made and photographed a few others.
One of my favorites is this Cookie Dough Dip. It is so good it's hard to believe it is made with navy beans as a base! Apples were delicious dipped in it. And those things that look like chocolate chips? Those are raisins, believe it or not. And it totally tastes like cookie dough. Mmmmm . . . Can't wait to pull that cook book off of my shelf and make this!

There have been ideas of using them as a topping on French onion soup, as hamburger buns, and one that I made for dinner tonight - mini pizzas. Turned out great and my kids and hubby like them too! So many options! And so fast and easy to make.
