I am so looking forward to our new cookbook! My Mom has been working hard on it for a long time! We don't live close to each other, but when we do get together I've had the joy of tasting some of the recipes . . . and have made and photographed a few others. One of my favorites is this Cookie Dough Dip. It is so good it's hard to believe it is made with navy beans as a base! Apples were delicious dipped in it. And those things that look like chocolate chips? Those are raisins, believe it or not. And it totally tastes like cookie dough. Mmmmm . . . Can't wait to pull that cook book off of my shelf and make this! I hope your week is going well. It has been so fun to read your comments and successes with the SCD English Muffins over on Facebook and here! I'm so happy that hit the spot with so many people. There have been ideas of using them as a topping on French onion soup, as hamburger buns, and one that I made for dinner tonight - mini pizzas. Turned out great and my kids and hubby like them too! So many options! And so fast and easy to make.
