We just returned from a great camping trip, enjoying our local Colorado mountains! It was so much fun. I think this was the first camping trip where I was very happily full of yummy food the whole time. In years past, I've kind of dreaded camping because I can't cook the way I do at home and so I'm limited in my food choices and usually haven't had enough to eat. Not a fun feeling when you want to be out enjoying activities with the family and relaxing! I realized the difference that having more SCD legal prepared food available has on my life! You'll notice in all of my food pictures, there is at least one slice of Liberated Specialty Foods Cashew Creme bread on my plate...yes, it has finally come to my local Sprouts!! I am beyond thankful that I can now run to the store for a loaf of amazing SCD bread. We have come a looooooong way from when I started the SCD in 2001! Let me tell you - this added a lot to my camping food options. Along with Wholly Gucamole (yes, there is a letter saying their classic guacamole is SCD legal!), Parmesan Whisps (just Parmesan Cheese, baked), Moon Cheese (just Cheddar Cheese, baked), Elmhurst almond milk (Sold through Wellbee's and my local Sprout's - LOVE that it doesn't have to be refrigerated until you open it!), and Freedom Bars (sold through Wellbee's), these prepared products had me set for a great time! My homemade SCD granola went great with the Elmhurst almond milk and honey! And of course, fresh fruit and veggies on the side rounded out the meals really well. I found that fruit like bananas, pears, and melon work well on camping trips because they aren't super delicate and don't always have to be washed. The Freedom Bar made great hiking food with some Parmesan Whisps and water. Cheese was great with the Liberated bread - so hearty! It reminded me of pumpernickel bread for some reason, and kept me full a long time. (Obviously I can do a lot with cheese with a plastic knife! ;-) ) And when it gets down to it - this great SCD food sustained me for the most important things in life. . . spending time with family . . . Enjoying beautiful views . . . Hiking together and making memories. These are really the reasons I follow the SCD in the first place - improved quality of life and remission of my disease so I can enjoy the life I've been given. The SCD has given me the FREEDOM to do all of this and more - pain-free, medication-free, and symptom-free. . . It's so worth it! We are thankful!!
