Last week, my middle son and I had a fun "Mommy Time" squeezing lime juice out of the bag of limes my grandparents sent home with us when we visited California over Christmas. My son loves to do cooking projects with me, and he was thrilled to be allowed to carefully cut the limes in half! Then he passed them on to me and I squeezed them. (We had tried having him squeeze them, but it was hard work for a 5 year old!) The kitchen smelled so fresh and summery in the middle of winter! After the limes were juiced, I poured the juice into ice cube trays and froze it in our garage freezer. (A grocery bag full yielded about four cups of juice!) After a couple of days, I emptied the cubes into zip top bags to store in the freezer. Now I just have to decide what to do with all of those lime juice cubes! My Grandpa likes to have diet soda with a cube of lime juice in it. We could flavor our water by adding cubes to a glass or pitcher...I can use fresh lime juice in recipes by thawing a cube and adding...
Any other ideas?

I love to make limeade adding stevia (which I tolerate). I also like to add lime juice to chopped tomatoes and to Thai inspired soups. I also like to flavor my water with a little lime juice. My son finds that it helps settle his stomach.

Thanks for your ideas, Betty! Sweet n' Low is a sweetener that is SCD-legal since it contains saccharine, so that could be added to the limeade as well. I've also thought about heating up lime juice and honey so the honey will dissolve and then pouring over ice cubes for a cool limeade.
