Birthday Eats & Treats

It was my birthday last week, and I wanted to have something really yummy for a cake. In the past, I've tried all kinds of cakes and pies for my birthday, and haven't been super excited about any of them until I discovered.... Cocoa Butter Cake! This is a fabulous recipe that tastes very similar to chocolate cake....yes, CHOCOLATE cake. :) When I first tasted the cake my mom had made, my first reaction was to say, "That's chocolate cake!" and was a little worried it wasn't completely SCD-legal! But cocoa butter is simply the fat from cocoa beans, so it's perfectly legal. It's also chock-full of antioxidants! ​
 We included the recipe in our downloadable cookbook "Favorite Chicken Recipes," and as I said it when we published it and I'll say it again: The Cocoa Butter Cake recipe alone is worth getting the cookbook! (Although there are a bunch of wonderful recipes included that I use often!) ​

The day before my birthday I whipped the cake up, as I already had cocoa butter on hand. (You can find it here to buy.)  I love that it's quick to make, tastes even better after a day or two, and is great even right out of the freezer. I refrigerated it (after taking a few pre-birthday girl bites...) and didn't have to do a thing for dessert on my birthday the next day!

I enjoyed being taken out by my guys to Mimi's where I got a chicken breast topped with flavorful handmade guacamole, grilled onions, with lettuce and tomatoes...yum! 

Jim had stopped and plucked some blossoms off of a tree for me on the way home from work, and the boys each made a card - what a sweet way to remember the blessings of this year. I'm so thankful for my wonderful family and the great health and good food I enjoy on the SCD!
