Jim made these wonderful Aebleskiver Pancake Balls for our early family Christmas this year, and they were GOOD. I'm always happy to get another bread-y recipe! Especially from Jim, whose SCD fluffy pancakes are popular for good reason... When we were first married, Jim took his Grandma's recipe for authentic Danish Aebleskiver and re-worked it for the SCD. He served them to me for breakfast and I could hardly get enough! They are so light and fluffy, it's actually hard to tell the difference between the SCD recipe and the regular one. (So they tell me...) Somewhere between two moves and three kids we lost the recipe, but I kept thinking about them. So when I saw him whipping them up again for Christmas breakfast I was so happy! His Grandma Alma was a hospitable Danish lady who loved to cook and entertain. She and Grandpa Gunny were Danish through and through, and retired in Solvang, a darling little Danish town in California. They were friends with one of the town's bakery owners and it's said that he liked some of her recipes so much that he used them in his bakery! Jim has fond memories of Grandma Alma with her Aebleskiver pans set up on the outside grill (because the recipe can create some haze in the house), flipping Aebleskiver as fast as her little arms could go, and he and his brother and sister gobbling them down and running back for more! He says they are best broken in half with jam slathered on top of each bite. I had mine with honey this time, and they were great! With orange juice and fruit and SCD yogurt & honey, if you're hungry enough, you'll have a wonderful breakfast. As a little Christmas gift to you, we wanted to share them! This could be a fun Christmas tradition! Jim's Aebelskiver Pancakes (Printable recipe) Batter
To cook aebleskivers: Using an aebleskiver (or pancake ball) pan, place 1/4 to 1/2 teaspoon coconut oil or shortening in each pancake hole. Heat to medium low. (These aebleskivers take longer to cook than Grandma Alma's because the honey and almond flour in the recipe cause them to burn more easily.) Put about 1 Tablespoon batter in each hole. Cook a bit until golden brown, then, moving in the same order as you filled the cups, using a skewer or knitting needle, pull the aebleskivers up and over so the other side can cook, creating a round ball. Use the skewer to turn pancakes around a bit, making sure all sides are brown. Remove with skewer. Add more oil and repeat. Spoon the batter to the top of the pan's holes into coconut oil or vegetable shortening. These are going to get fried. Mmmmmmm... They will puff up nicely. When the bottom is brown, turn them gently with a skewer. There is no way to go wrong with these. Dip in honey or slather in your favorite homemade jam.
