Coconut oil has so many great health benefits! And smoothies are a really easy way to incorporate it into my diet.
This may be old hat to some of you, but I was thinking about this the other day and wondering how many people know how to add coconut oil to smoothies without the smoothie becoming clumpy. Because coconut oil hardens at common room temperatures (75 degrees and below), it definitely gets hard in a cold smoothie. And I don't know about you, but clumpy smoothies aren't my favorite. I would much prefer a smooth smoothie. Makes sense, right? ;-) So what I do is take a spoonful of coconut oil and place it in a glass bowl. Then I warm it up in the microwave for 20-30 seconds, until it's a liquid consistency. When my smoothie is well-blended, I keep the blender on while I slowly pour the coconut oil in. Very easy, healthy, and delicious too! ~ Erin
