It seems that these last stages of completing the cookbook are taking forever! We've chosen the cover, made final edits, and now are looking into the possibility of offering it in a Kindle edition as well as a soft cover edition. In the meantime, to whet all of our appetites . . . a few pictures. I made the Berry Crisp this week, and it was very good! We all enjoyed it, and the flavors continued to meld together nicely when enjoyed from the fridge over a day or two. I liked it even more cooled, and it made a great breakfast side along with yogurt & honey. I'm always up for a new sauce, and this one looks great! There are 14 sauces and salsas in the cookbook. Yum. As a busy homeschooling mom, crock pot recipes are like gold to me. Can't wait to make this! Pre-SCD I loved couscous, so I'm really looking forward to making this one. I find that when spices and veggies are added to cauliflower rice, it makes a great substitute for flavored couscous or rice. Are any of you planting vegetable gardens this year? If so, what vegetables do you plan on growing?
We bought our house late last year, so we'll see what kind of a garden plot we can make. If we get to planting a vegetable garden, I'd like to grow tomatoes, zucchini, and maybe green beans. My boys have the entrepreneurial idea of growing pumpkins to sell in the neighborhood around Halloween. We'll see how that pans out! ;-) In the meantime, I'm excited to finally get to begin to beautify our yard with peonies, hollyhocks, sweet peas, etc.! Have a great weekend coming up! ~ Erin

Sorry it's taking so long for the book! Can't wait to see it when it comes out. Your garden sounds nice. Nothing like homegrown veggies!
